My ingredients list is always a little rough, and the method is more of a map. Because when in doubt about where to go, channel that inner nonna inside of you. Whether that requires singing into a wooden spoon or chugging a glass of wine - trust me, she’s there.

That’s why this is more of a technique rather than a recipe, like all my recipes really - a guideline to getting you in the kitchen and making some contadino shit forever.

I bippity-boppity-booed this delicious ragu into a crazy-good lasagna. I used fresh lasagna sheets I had previously frozen, and turned the remaining milk in my fridge into a luscious besciamelle (my recipe here!)
