I woke up thinking about bread. Relatable, I think. Thereβs nothing more irresistible than warm bread fresh out of the oven. And with how chilly these mornings are lately, warm bread might be the only thing that can lure me out of bed.

Yes forno literally means oven. βThe best ovens in townβ has such a better ring to it, doesnβt it? Itβs also why some bakeries have the name antico forno (the old oven) in Italy. It means that oven is well-seasoned and cranking out some seriously historic carbs.
In Italy, bakeries have different names depending on what they specialize in. I feel no one talks about this enough. Many throw out there - the best bakery in Rome! But are we talking about bread? For cookies? For slutti maritozzi? My Italian side screams for details, details people!
Because here we are serious about bread. No mystery plastic bag-packed bread that lasts 3 years on the counter here.
The basic breakdown for names of bread bakeries in Italy is this:
forno, panificio, or panetteria
Which name is more common? This seems to be yet again a regional thing - here in Rome, itβs usually forno or panificio. Some say panificio means a more commercial bread producer but thatβs not necessarily true.
Letβs be real - Rome is a big city. Weβre talking at least 7 times bigger than Milano. So, have I tried every forno in Rome? No, but I can tell you the best of places I frequent often and that are consistently slutti and fabulous.
