The most delicious things often come as surprises. While I love all the guts in Italian cuisine, sometimes you don’t know how gritty it’s going to get. How liver will the liver be? How stomach-y will the tripe be?

But, wow, this plate of tagliatelle with Florentine cow guts was amazing.
